Lemon-Herb Grilled Chicken with Mediterranean Quinoa Salad

Ingredients
- 4-6 oz chicken breast
- 1 tablespoon olive oil
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup quinoa
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 2 tablespoons feta cheese, crumbled
- 1 tablespoon balsamic vinegar
Instructions
- 1. Preheat a grill or grill pan to medium-high heat.
- 2. In a small bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- 3. Marinate the chicken breast in the mixture for at least 10 minutes.
- 4. While the chicken marinates, rinse the quinoa under cold water, then cook according to package instructions.
- 5. Combine cherry tomatoes, cucumber, red onion, parsley, and feta in a large bowl.
- 6. Once quinoa is cooked, let it cool slightly and add to the vegetable mix.
- 7. Add balsamic vinegar, salt, and pepper to the quinoa salad and toss to combine.
- 8. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
