Lemon-Herb Grilled Chicken with Mediterranean Quinoa Salad

Ingredients

  • 4-6 oz chicken breast
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 2 tablespoons feta cheese, crumbled
  • 1 tablespoon balsamic vinegar

Instructions

  1. 1. Preheat a grill or grill pan to medium-high heat.
  2. 2. In a small bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  3. 3. Marinate the chicken breast in the mixture for at least 10 minutes.
  4. 4. While the chicken marinates, rinse the quinoa under cold water, then cook according to package instructions.
