Pan-Seared Salmon with Mediterranean Quinoa and Garlic Spinach
A vibrant and flavorful dish featuring pan-seared salmon, paired with nutrient-rich quinoa and savory garlic spinach, bringing a Mediterranean escape to your dining table.
Ingredients
- 4-6 oz salmon fillet
- 1/2 cup quinoa
- 1 cup cherry tomatoes, halved
- 1/4 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 1 cup fresh spinach
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- Rinse the quinoa under cold water. Bring 1 cup of water to a boil, add quinoa, and simmer for 15 minutes or until water is absorbed and quinoa is fluffy. Set aside.
- Heat 1/2 tbsp of olive oil in a skillet over medium heat. Season salmon with salt and pepper, then place skin-side down. Cook for 4-5 minutes per side, or until cooked through. Remove from skillet and cover with foil to keep warm.
- In the same skillet, add 1/2 tbsp of olive oil and minced garlic. Sauté for 1 minute, then add spinach and cook until wilted. Season with salt and pepper.
- In a bowl, mix cooked quinoa with cherry tomatoes, olives, feta cheese, and parsley. Drizzle with lemon juice and toss to combine.
- Plate the quinoa mixture and top with salmon. Serve alongside the garlic spinach.
