Pan-Seared Salmon with Mediterranean Quinoa and Garlic Spinach

A vibrant and flavorful dish featuring pan-seared salmon, paired with nutrient-rich quinoa and savory garlic spinach, bringing a Mediterranean escape to your dining table.

Ingredients

  • 4-6 oz salmon fillet
  • 1/2 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1 cup fresh spinach
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Rinse the quinoa under cold water. Bring 1 cup of water to a boil, add quinoa, and simmer for 15 minutes or until water is absorbed and quinoa is fluffy. Set aside.
  2. Heat 1/2 tbsp of olive oil in a skillet over medium heat. Season salmon with salt and pepper, then place skin-side down. Cook for 4-5 minutes per side, or until cooked through. Remove from skillet and cover with foil to keep warm.
  3. In the same skillet, add 1/2 tbsp of olive oil and minced garlic. Sauté for 1 minute, then add spinach and cook until wilted. Season with salt and pepper.
  4. In a bowl, mix cooked quinoa with cherry tomatoes, olives, feta cheese, and parsley. Drizzle with lemon juice and toss to combine.
  5. Plate the quinoa mixture and top with salmon. Serve alongside the garlic spinach.
