Herb-Grilled Shrimp with Lemon-Garlic Zucchini Noodles

A light and flavorful meal featuring grilled shrimp seasoned with fresh herbs, paired with lemon-garlic zucchini noodles for a refreshing twist on pasta.

Ingredients

  • 8-12 oz shrimp, peeled and deveined (4-6 oz per person)
  • 2 medium zucchinis, spiralized into noodles
  • 2 tbsp olive oil (EVOO)
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/4 cup Parmesan cheese, grated (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine shrimp with 1 tablespoon of olive oil, lemon zest, half of the minced garlic, basil, parsley, salt, and pepper. Toss until shrimp are evenly coated.
  3. Thread the shrimp onto skewers and grill for 2-3 minutes on each side, until they are pink and opaque.
  4. While the shrimp are grilling, heat the remaining olive oil in a large pan over medium heat.
  5. Add the remaining garlic and sauté for about 1 minute until fragrant.
  6. Add the zucchini noodles and lemon juice to the pan, tossing them gently for 3-4 minutes until slightly tender.
  7. Remove the noodles from heat and season with salt and pepper to taste.
  8. Serve the herb-grilled shrimp over the zucchini noodles and sprinkle with Parmesan cheese, if desired.
