Herb-Grilled Shrimp with Lemon-Garlic Zucchini Noodles
A light and flavorful meal featuring grilled shrimp seasoned with fresh herbs, paired with lemon-garlic zucchini noodles for a refreshing twist on pasta.
Ingredients
- 8-12 oz shrimp, peeled and deveined (4-6 oz per person)
- 2 medium zucchinis, spiralized into noodles
- 2 tbsp olive oil (EVOO)
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/4 cup Parmesan cheese, grated (optional)
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine shrimp with 1 tablespoon of olive oil, lemon zest, half of the minced garlic, basil, parsley, salt, and pepper. Toss until shrimp are evenly coated.
- Thread the shrimp onto skewers and grill for 2-3 minutes on each side, until they are pink and opaque.
- While the shrimp are grilling, heat the remaining olive oil in a large pan over medium heat.
- Add the remaining garlic and sauté for about 1 minute until fragrant.
- Add the zucchini noodles and lemon juice to the pan, tossing them gently for 3-4 minutes until slightly tender.
- Remove the noodles from heat and season with salt and pepper to taste.
- Serve the herb-grilled shrimp over the zucchini noodles and sprinkle with Parmesan cheese, if desired.
