  • 1 yellow squash, sliced
  • 1/2 cup quinoa, rinsed
  • 2 tbsp olive oil (EVOO)
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1/2 red bell pepper, julienned
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp all-natural honey
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 lemon, juiced
  • Fresh cilantro, for garnish

Instructions

  1. In a small pot, cook 1/2 cup quinoa according to package instructions. Set aside.
  2. In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add shrimp, season with salt and pepper, and sauté for 3-4 minutes until pink and opaque. Remove from the pan.
  3. In the same skillet, add another 1 tbsp olive oil. Add minced garlic, onion, and red bell pepper. Sauté for 2 minutes.
