Caramelized Shrimp & Squash Stir-Fry with Quinoa
Savor this delightful stir-fry featuring sweet, caramelized shrimp paired with tender zucchini and squash, served over fluffy quinoa. A harmonious blend of flavors and textures that's both nutritious and satisfying.
Ingredients
- 4-6 oz shrimp (peeled and deveined)
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1/2 cup quinoa, rinsed
- 2 tbsp olive oil (EVOO)
- 2 cloves garlic, minced
- 1 onion, thinly sliced
- 1/2 red bell pepper, julienned
- 1/4 cup low-sodium soy sauce
- 1 tbsp all-natural honey
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 lemon, juiced
- Fresh cilantro, for garnish
Instructions
- In a small pot, cook 1/2 cup quinoa according to package instructions. Set aside.
- In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add shrimp, season with salt and pepper, and sauté for 3-4 minutes until pink and opaque. Remove from the pan.
- In the same skillet, add another 1 tbsp olive oil. Add minced garlic, onion, and red bell pepper. Sauté for 2 minutes.
- Add zucchini and yellow squash to the skillet. Stir in low-sodium soy sauce and honey. Cook for 5-7 minutes until vegetables are tender and caramelized.
- Return shrimp to the skillet. Add red pepper flakes, if using, and lemon juice. Toss everything together and cook for 1-2 additional minutes.
- Serve the shrimp and vegetable mix over a bed of cooked quinoa.
- Garnish with fresh cilantro and serve immediately.
