Spiced Grilled Shrimp with Avocado and Quinoa Salad

Ingredients
- 4-6 oz shrimp, peeled and deveined
- 1/2 cup quinoa
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup lettuce, chopped
- 1 tablespoon olive oil (EVOO)
- 1 tablespoon lime juice
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Rinse the quinoa under cold water. Cook according to package instructions, then set aside to cool.
- In a large bowl, combine diced avocado, cherry tomatoes, cucumber, red onion, and lettuce. Toss with lime juice and a pinch of salt and pepper.
- In another bowl, mix shrimp with olive oil, smoked paprika, cumin, salt, and pepper. Ensure shrimp are well-coated.
- Preheat a grill or grill pan over medium heat. Grill the shrimp for 2-3 minutes on each side until pink and cooked through.
- Incorporate the cooked quinoa into the salad mixture, stirring gently to combine all ingredients.
- Plate the quinoa salad, placing the grilled shrimp on top. Garnish with fresh cilantro.
