Spiced Grilled Shrimp with Avocado and Quinoa Salad

A bold and vibrant shrimp dish paired with a refreshing avocado and quinoa salad, perfect for a quick and nutritious meal.

Ingredients

  • 4-6 oz shrimp, peeled and deveined
  • 1/2 cup quinoa
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup lettuce, chopped
  • 1 tablespoon olive oil (EVOO)
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the quinoa under cold water. Cook according to package instructions, then set aside to cool.
  2. In a large bowl, combine diced avocado, cherry tomatoes, cucumber, red onion, and lettuce. Toss with lime juice and a pinch of salt and pepper.
  3. In another bowl, mix shrimp with olive oil, smoked paprika, cumin, salt, and pepper. Ensure shrimp are well-coated.
  4. Preheat a grill or grill pan over medium heat. Grill the shrimp for 2-3 minutes on each side until pink and cooked through.
  5. Incorporate the cooked quinoa into the salad mixture, stirring gently to combine all ingredients.
  6. Plate the quinoa salad, placing the grilled shrimp on top. Garnish with fresh cilantro.
  7. Serve immediately and enjoy this healthy, flavorful dish.
