Citrus-Infused Grilled Salmon with Mediterranean Veggie Medley
A delightful combination of grilled salmon enhanced with vibrant citrus and a colorful medley of Mediterranean vegetables, bringing both flavor and nutrition to your plate.
Ingredients
- 4-6 oz salmon fillet
- 1 orange, juiced and zested
- 1 tablespoon olive oil
- 2 cups cherry tomatoes, halved
- 1 zucchini, sliced
- 1 cup bell pepper, sliced (red or green)
- 1 cup broccoli florets
- 1/2 cup quinoa
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon fresh basil, chopped (optional)
Instructions
- In a small bowl, combine orange juice, zest, and olive oil. Season with salt and pepper.
- Marinate the salmon fillet in the citrus mixture for 10-15 minutes.
- While marinating, cook quinoa according to package directions.
- Preheat a grill or grill pan over medium heat.
- Grill the salmon for 4-6 minutes on each side until cooked through and flaky. Remove from heat and let rest.
- In a separate skillet, sauté cherry tomatoes, zucchini, bell pepper, and broccoli over medium heat until tender, about 5-7 minutes. Season with oregano, salt, and pepper.
- Serve the grilled salmon over a bed of quinoa and Mediterranean veggie medley. Garnish with fresh basil if desired.
