Lemon-Herb Grilled Shrimp with Zucchini Noodle Salad

Enjoy a refreshing and light meal featuring grilled shrimp marinated with zesty lemon and aromatic herbs, served atop a crisp zucchini noodle salad. This dish is packed with protein, vegetables, and a burst of citrus flavor.

Ingredients

  • 4-6 oz shrimp, deveined and peeled
  • 2 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh basil leaves, roughly chopped
  • 1 lemon, zest and juice
  • 2 tbsp olive oil (EVOO)
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the shrimp, lemon zest, half of the lemon juice, 1 tablespoon olive oil, 1 clove of minced garlic, salt, and pepper. Toss to coat and marinate for 10 minutes.
  2. Preheat a grill pan over medium-high heat. Grill the shrimp for 2-3 minutes on each side until cooked through and lightly charred.
  3. In a large mixing bowl, combine spiralized zucchini, cherry tomatoes, red onion, basil, remaining lemon juice, remaining olive oil, balsamic vinegar, 1 clove of minced garlic, salt, and pepper. Toss gently to combine.
  4. Divide the zucchini noodle salad between two plates and top with grilled shrimp.
  5. Garnish with extra basil leaves if desired. Serve immediately.
