Lemon-Herb Grilled Shrimp with Zucchini Noodle Salad
Enjoy a refreshing and light meal featuring grilled shrimp marinated with zesty lemon and aromatic herbs, served atop a crisp zucchini noodle salad. This dish is packed with protein, vegetables, and a burst of citrus flavor.
Ingredients
- 4-6 oz shrimp, deveined and peeled
- 2 medium zucchinis, spiralized
- 1 cup cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- 1/4 cup fresh basil leaves, roughly chopped
- 1 lemon, zest and juice
- 2 tbsp olive oil (EVOO)
- 1 tbsp balsamic vinegar
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a bowl, combine the shrimp, lemon zest, half of the lemon juice, 1 tablespoon olive oil, 1 clove of minced garlic, salt, and pepper. Toss to coat and marinate for 10 minutes.
- Preheat a grill pan over medium-high heat. Grill the shrimp for 2-3 minutes on each side until cooked through and lightly charred.
- In a large mixing bowl, combine spiralized zucchini, cherry tomatoes, red onion, basil, remaining lemon juice, remaining olive oil, balsamic vinegar, 1 clove of minced garlic, salt, and pepper. Toss gently to combine.
- Divide the zucchini noodle salad between two plates and top with grilled shrimp.
- Garnish with extra basil leaves if desired. Serve immediately.
