Mediterranean Herb-Crusted Chicken with Zucchini Noodles
A delightful, aromatic dish featuring a herb-crusted chicken breast paired with fresh zucchini noodles and a tangy tomato olive relish.
Ingredients
- 4-6 oz chicken breast
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 clove garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup olives, sliced
- 2 medium zucchinis, spiralized into noodles
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Mix rosemary, thyme, and garlic with 1 tbsp olive oil. Coat the chicken breast with this herb mixture and season with salt and pepper.
- Place chicken on a baking sheet and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- While the chicken is baking, heat 1 tbsp olive oil in a skillet over medium heat. Add cherry tomatoes, olives, and lemon juice. Sauté for 5 minutes until tomatoes soften.
- In another skillet, lightly sauté the zucchini noodles for 3-4 minutes until tender, adding a pinch of salt and pepper.
- Serve the herb-crusted chicken on a bed of zucchini noodles, topped with the tomato olive relish.
