Mediterranean Herb-Crusted Tilapia with Zucchini Noodles

Ingredients
- 4-6 oz tilapia fillet
- 2 medium zucchinis
- 1 tbsp olive oil
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh basil
- 1 clove garlic, minced
- 1/2 lemon, juiced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the parsley, basil, garlic, salt, and pepper.
- Place the tilapia fillets on a baking sheet lined with parchment paper. Drizzle with half the lemon juice and coat generously with the herb mixture.
- Bake the tilapia for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- While the tilapia is baking, spiralize the zucchinis to create noodles.
- Heat olive oil in a large pan over medium heat. Add the zucchini noodles and sauté for 3-4 minutes, until just tender.
- Add the cherry tomatoes to the pan and cook for an additional minute.
- Remove from heat and add the remaining lemon juice to the zucchini noodles.
- Serve the herb-crusted tilapia over a bed of zucchini noodles, garnished with crumbled feta cheese if desired.
