Mediterranean Herb-Crusted Tilapia with Zucchini Noodles

Experience a delightful fusion of flavors with this herb-crusted tilapia, accompanied by fresh zucchini noodles. A nutritious and refreshing meal, perfect for a healthy lifestyle.

Ingredients

  • 4-6 oz tilapia fillet
  • 2 medium zucchinis
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil
  • 1 clove garlic, minced
  • 1/2 lemon, juiced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the parsley, basil, garlic, salt, and pepper.
  3. Place the tilapia fillets on a baking sheet lined with parchment paper. Drizzle with half the lemon juice and coat generously with the herb mixture.
  4. Bake the tilapia for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  5. While the tilapia is baking, spiralize the zucchinis to create noodles.
  6. Heat olive oil in a large pan over medium heat. Add the zucchini noodles and sauté for 3-4 minutes, until just tender.
  7. Add the cherry tomatoes to the pan and cook for an additional minute.
  8. Remove from heat and add the remaining lemon juice to the zucchini noodles.
  9. Serve the herb-crusted tilapia over a bed of zucchini noodles, garnished with crumbled feta cheese if desired.
