Asian-Inspired Sesame Shrimp with Green Bean Stir-Fry
A delightful and nutritious meal featuring tender sesame shrimp tossed with vibrant green beans, mushrooms, and bell peppers, served over a bed of fluffy quinoa.
Ingredients
- 4-6 oz shrimp, peeled and deveined
- 1 cup green beans, trimmed
- 1 cup mushrooms, sliced
- 1 red bell pepper, sliced
- 1/2 cup quinoa
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil (EVOO)
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 2 green onions, sliced
- 1 tbsp sesame seeds
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water. Cook according to package instructions, then set aside.
- In a large skillet, heat olive oil over medium-high heat. Add garlic and ginger, sautéing for about 1 minute until fragrant.
- Add shrimp to the skillet. Cook for 3-4 minutes until the shrimp are pink and opaque. Remove from the skillet and set aside.
- In the same skillet, add sesame oil. Sauté mushrooms, green beans, and bell pepper for 5-7 minutes until tender-crisp.
- Return the shrimp to the skillet. Add soy sauce, green onions, and sesame seeds. Stir to combine and heat through, about 2 minutes.
- Serve the shrimp and vegetable mixture over quinoa, garnished with additional green onions if desired.
