Asian-Inspired Sesame Shrimp with Green Bean Stir-Fry

A delightful and nutritious meal featuring tender sesame shrimp tossed with vibrant green beans, mushrooms, and bell peppers, served over a bed of fluffy quinoa.

Ingredients

  • 4-6 oz shrimp, peeled and deveined
  • 1 cup green beans, trimmed
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1/2 cup quinoa
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil (EVOO)
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 green onions, sliced
  • 1 tbsp sesame seeds
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. Cook according to package instructions, then set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add shrimp to the skillet. Cook for 3-4 minutes until the shrimp are pink and opaque. Remove from the skillet and set aside.
  4. In the same skillet, add sesame oil. Sauté mushrooms, green beans, and bell pepper for 5-7 minutes until tender-crisp.
  5. Return the shrimp to the skillet. Add soy sauce, green onions, and sesame seeds. Stir to combine and heat through, about 2 minutes.
  6. Serve the shrimp and vegetable mixture over quinoa, garnished with additional green onions if desired.
