Herb-Crusted Tilapia with Roasted Brussels and Quinoa
This flavorful dish features herb-crusted tilapia served alongside roasted Brussels sprouts and fluffy quinoa. Rich in omega-3s and fiber, it's a perfect balance of protein, vegetables, and whole grains.
Ingredients
- 8 oz tilapia fillets
- 1 cup Brussels sprouts, halved
- 1/2 cup quinoa, rinsed
- 1 tbsp olive oil
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
- 1 clove garlic, minced
- Salt and pepper to taste
- 1/2 lemon, sliced
Instructions
- Preheat the oven to 425°F (220°C).
- Place quinoa in a saucepan with 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
- While quinoa is cooking, toss Brussels sprouts with 1/2 tablespoon of olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast in the oven for 20 minutes, stirring halfway through.
- Rub tilapia fillets with the remaining olive oil, dried rosemary, thyme, salt, and pepper. Place on a separate baking sheet.
- Add lemon slices around the tilapia and bake for 12-15 minutes, until the fish is opaque and flakes easily with a fork.
- Serve the herb-crusted tilapia over quinoa, accompanied by roasted Brussels sprouts. Squeeze extra lemon juice over the fish for added flavor.
