Savory Herb-Crusted Halibut with Zucchini Noodles and Cherry Tomatoes
A delightful, low-carb dish featuring herb-crusted halibut paired with fresh zucchini noodles and sweet cherry tomatoes, offering a nutritious balance of flavors and omega-3 richness.
Ingredients
- 8 oz Halibut fillet (cut into two 4 oz portions)
- 1 cup cherry tomatoes, halved
- 2 medium zucchinis, spiralized
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine parsley, dill, garlic, olive oil, lemon juice, salt, and pepper.
- Place the halibut fillets on a baking sheet lined with parchment paper. Evenly spread the herb mixture over the top of each fillet.
- Bake in the preheated oven for 12-15 minutes until the halibut is cooked through and flaky.
- While the halibut is baking, heat a non-stick skillet over medium heat.
- Add the zucchini noodles and cook for about 3-5 minutes until slightly softened. Season with a pinch of salt.
- Add the cherry tomatoes to the skillet and cook for an additional 2 minutes until they begin to release their juices.
- Serve each halibut fillet over a bed of zucchini noodles and cherry tomatoes. Sprinkle with feta cheese before serving.
