Zesty Lemon Herb Tilapia with Sauteed Veggie Medley

A flavorful and nutritious dish featuring tender tilapia seasoned with fresh lemon and herbs, served alongside a vibrant medley of sautéed vegetables.

Ingredients

  • 8-12 oz Tilapia fillets
  • 1 lemon (zested and juiced)
  • 2 tbsp olive oil (EVOO)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 cup sliced zucchini
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup quinoa, cooked
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the tilapia fillets on a baking sheet lined with parchment paper.
  3. In a small bowl, mix lemon zest, lemon juice, 1 tbsp olive oil, garlic powder, oregano, salt, and pepper.
  4. Brush the lemon herb mixture over the tilapia fillets.
  5. Bake the tilapia in the oven for 15-20 minutes until cooked through and flaky.
  6. While the fish is baking, heat 1 tbsp olive oil in a large skillet over medium heat.
  7. Add broccoli, zucchini, red bell pepper, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until vegetables are tender.
  8. Season the vegetables with a pinch of salt and pepper.
  9. On each plate, serve the tilapia with a spoonful of sautéed vegetables and a side of cooked quinoa.
  10. Garnish with chopped parsley and a lemon wedge.
