Zesty Lemon Herb Tilapia with Sauteed Veggie Medley
A flavorful and nutritious dish featuring tender tilapia seasoned with fresh lemon and herbs, served alongside a vibrant medley of sautéed vegetables.
Ingredients
- 8-12 oz Tilapia fillets
- 1 lemon (zested and juiced)
- 2 tbsp olive oil (EVOO)
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup broccoli florets
- 1 cup sliced zucchini
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, sliced
- 1/2 cup quinoa, cooked
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Place the tilapia fillets on a baking sheet lined with parchment paper.
- In a small bowl, mix lemon zest, lemon juice, 1 tbsp olive oil, garlic powder, oregano, salt, and pepper.
- Brush the lemon herb mixture over the tilapia fillets.
- Bake the tilapia in the oven for 15-20 minutes until cooked through and flaky.
- While the fish is baking, heat 1 tbsp olive oil in a large skillet over medium heat.
- Add broccoli, zucchini, red bell pepper, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until vegetables are tender.
- Season the vegetables with a pinch of salt and pepper.
- On each plate, serve the tilapia with a spoonful of sautéed vegetables and a side of cooked quinoa.
- Garnish with chopped parsley and a lemon wedge.
