Zesty Lemon Herb Halibut with Sautéed Spinach and Quinoa

Ingredients

  • 8 oz halibut fillets (4 oz each)
  • 1/2 cup quinoa
  • 2 cups fresh spinach leaves
  • 1 tablespoon olive oil (EVOO)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Lemon wedges for garnish

Instructions

  1. 1. Rinse the quinoa under cold water. In a small saucepan, add 1 cup water and quinoa. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
  2. 2. While the quinoa is cooking, pat the halibut fillets dry with paper towels. Season with lemon zest, oregano, thyme, salt, and pepper.
  3. 3. Heat 1/2 tablespoon of olive oil in a non-stick skillet over medium heat. Add the halibut fillets and cook for 3-4 minutes on each side until cooked through and flaky.
  4. 4. In another pan, heat 1/2 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the spinach and cook until wilted, about 2-3 minutes. Season with a little salt and pepper.
  5. 5. Once everything is cooked, serve the halibut over a bed of quinoa, accompanied by the sautéed spinach. Drizzle with fresh lemon juice and serve with lemon wedges on the side.
