Zesty Lemon Herb Halibut with Sautéed Spinach and Quinoa

Ingredients
- 8 oz halibut fillets (4 oz each)
- 1/2 cup quinoa
- 2 cups fresh spinach leaves
- 1 tablespoon olive oil (EVOO)
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Lemon wedges for garnish
Instructions
- 1. Rinse the quinoa under cold water. In a small saucepan, add 1 cup water and quinoa. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
- 2. While the quinoa is cooking, pat the halibut fillets dry with paper towels. Season with lemon zest, oregano, thyme, salt, and pepper.
- 3. Heat 1/2 tablespoon of olive oil in a non-stick skillet over medium heat. Add the halibut fillets and cook for 3-4 minutes on each side until cooked through and flaky.
- 4. In another pan, heat 1/2 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the spinach and cook until wilted, about 2-3 minutes. Season with a little salt and pepper.
- 5. Once everything is cooked, serve the halibut over a bed of quinoa, accompanied by the sautéed spinach. Drizzle with fresh lemon juice and serve with lemon wedges on the side.
