Zesty Salmon & Veggie Stir-Fry with Quinoa Pilaf
A flavorful stir-fry featuring succulent salmon, colorful vegetables, and a savory quinoa pilaf, perfect for a nutritious and satisfying meal.
Ingredients
- 8 oz salmon fillets, skin removed
- 1 cup kale, chopped
- 1 cup broccoli florets
- 1/2 cup red bell pepper, sliced
- 1/2 cup zucchini, sliced
- 1/2 cup quinoa
- 1/4 cup green onions, chopped
- 1 tablespoon olive oil
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon ginger, grated
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/2 avocado, sliced
Instructions
- Rinse quinoa under cold water and cook according to package instructions. Set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add salmon fillets to the skillet, cook for 3-4 minutes on each side until cooked through. Remove and set aside.
- In the same skillet, add broccoli, red bell pepper, zucchini, and kale. Stir-fry for 5-6 minutes until vegetables are tender-crisp.
- Mix lemon juice, soy sauce, black pepper, and red pepper flakes in a small bowl. Pour over the vegetables and toss to coat evenly.
- Flake the cooked salmon into large chunks and return to the skillet with the vegetables. Gently toss to combine, allowing flavors to meld for 1-2 minutes.
- Serve the stir-fry over the cooked quinoa, garnished with green onions and avocado slices.
