Zesty Salmon & Veggie Stir-Fry with Quinoa Pilaf

A flavorful stir-fry featuring succulent salmon, colorful vegetables, and a savory quinoa pilaf, perfect for a nutritious and satisfying meal.

Ingredients

  • 8 oz salmon fillets, skin removed
  • 1 cup kale, chopped
  • 1 cup broccoli florets
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup zucchini, sliced
  • 1/2 cup quinoa
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 avocado, sliced

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
  3. Add salmon fillets to the skillet, cook for 3-4 minutes on each side until cooked through. Remove and set aside.
  4. In the same skillet, add broccoli, red bell pepper, zucchini, and kale. Stir-fry for 5-6 minutes until vegetables are tender-crisp.
  5. Mix lemon juice, soy sauce, black pepper, and red pepper flakes in a small bowl. Pour over the vegetables and toss to coat evenly.
  6. Flake the cooked salmon into large chunks and return to the skillet with the vegetables. Gently toss to combine, allowing flavors to meld for 1-2 minutes.
  7. Serve the stir-fry over the cooked quinoa, garnished with green onions and avocado slices.
