Zesty Shrimp & Veggie Quinoa Bowl
A vibrant and satisfying bowl featuring tender shrimp, colorful vegetables, and fluffy quinoa, seasoned with a hint of citrus and spice.
Ingredients
- 8 oz shrimp, peeled and deveined
- 1 cup quinoa, cooked
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1/2 cup cherry tomatoes, halved
- 2 tbsp olive oil (EVOO)
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/4 avocado, sliced
- Fresh parsley, chopped, for garnish
Instructions
- Cook the quinoa according to package instructions and set aside.
- In a large skillet, heat 1 tbsp of olive oil over medium heat. Add shrimp and season with smoked paprika, garlic powder, salt, and pepper. Sauté until pink and cooked through, about 4-5 minutes. Remove from skillet and set aside.
- In the same skillet, add another tbsp of olive oil and toss in red bell pepper, zucchini, broccoli florets, and cherry tomatoes. Sauté until vegetables are tender-crisp, about 5-7 minutes.
- Return the cooked shrimp to the skillet and drizzle with lemon juice. Stir everything to combine and heat through.
- Divide the cooked quinoa between two bowls. Top with the shrimp and vegetable mixture.
- Garnish with avocado slices and fresh parsley.
- Serve immediately and enjoy!
