Zesty Shrimp & Veggie Quinoa Bowl

A vibrant and satisfying bowl featuring tender shrimp, colorful vegetables, and fluffy quinoa, seasoned with a hint of citrus and spice.

Ingredients

  • 8 oz shrimp, peeled and deveined
  • 1 cup quinoa, cooked
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp olive oil (EVOO)
  • 1 tbsp lemon juice
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 avocado, sliced
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the quinoa according to package instructions and set aside.
  2. In a large skillet, heat 1 tbsp of olive oil over medium heat. Add shrimp and season with smoked paprika, garlic powder, salt, and pepper. Sauté until pink and cooked through, about 4-5 minutes. Remove from skillet and set aside.
  3. In the same skillet, add another tbsp of olive oil and toss in red bell pepper, zucchini, broccoli florets, and cherry tomatoes. Sauté until vegetables are tender-crisp, about 5-7 minutes.
  4. Return the cooked shrimp to the skillet and drizzle with lemon juice. Stir everything to combine and heat through.
  5. Divide the cooked quinoa between two bowls. Top with the shrimp and vegetable mixture.
  6. Garnish with avocado slices and fresh parsley.
  7. Serve immediately and enjoy!
