Lemon Herb Grilled Halibut with Zucchini Noodles and Cherry Tomato Salad

A refreshing and light meal featuring grilled halibut seasoned with zesty lemon and herbs, served alongside zucchini noodles and a vibrant cherry tomato salad.

Ingredients

  • 8 oz halibut fillet
  • 1 tablespoon olive oil
  • 1 lemon, juiced and zested
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 2 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush halibut fillets with olive oil, lemon juice, and lemon zest. Sprinkle with thyme, rosemary, salt, and pepper.
  3. Grill halibut for 4-5 minutes per side until cooked through and flakes easily with a fork.
  4. While fish is grilling, heat a non-stick skillet over medium heat, add zucchini noodles, and sauté for 3-4 minutes until slightly tender. Remove from heat.
  5. In a bowl, combine cherry tomatoes, red onion, balsamic vinegar, and basil. Season with salt and pepper to taste.
  6. Serve grilled halibut over sautéed zucchini noodles with a side of cherry tomato salad.
