Lemon Herb Grilled Halibut with Zucchini Noodles and Cherry Tomato Salad
A refreshing and light meal featuring grilled halibut seasoned with zesty lemon and herbs, served alongside zucchini noodles and a vibrant cherry tomato salad.
Ingredients
- 8 oz halibut fillet
- 1 tablespoon olive oil
- 1 lemon, juiced and zested
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh rosemary, chopped
- Salt and pepper to taste
- 2 medium zucchinis, spiralized
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh basil, chopped
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Brush halibut fillets with olive oil, lemon juice, and lemon zest. Sprinkle with thyme, rosemary, salt, and pepper.
- Grill halibut for 4-5 minutes per side until cooked through and flakes easily with a fork.
- While fish is grilling, heat a non-stick skillet over medium heat, add zucchini noodles, and sauté for 3-4 minutes until slightly tender. Remove from heat.
- In a bowl, combine cherry tomatoes, red onion, balsamic vinegar, and basil. Season with salt and pepper to taste.
- Serve grilled halibut over sautéed zucchini noodles with a side of cherry tomato salad.
