Savory Shrimp & Spinach Stir-Fry with Quinoa Pilaf
A delicious and nutritious shrimp stir-fry featuring sautéed spinach, red peppers, and earthy quinoa pilaf. Packed with protein, fiber, and rich in omega-3s, this meal is a perfect balance of flavors and nutrients.
Ingredients
- 8 oz shrimp, peeled and deveined
- 1 cup spinach, fresh
- 1/2 cup red bell pepper, sliced
- 1/2 cup quinoa, rinsed
- 1/2 cup low-sodium chicken broth
- 1 tbsp olive oil
- 1 tsp garlic, minced
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/4 tsp black pepper
- 1/4 tsp sea salt
- 1/4 avocado, sliced
Instructions
- Cook the quinoa: In a small pot, combine quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Fluff with a fork and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add shrimp to the skillet, season with oregano, salt, and black pepper. Cook for 3-4 minutes until shrimp are pink and opaque.
- Stir in spinach and red bell pepper. Cook for another 2-3 minutes until spinach is wilted and peppers are tender-crisp.
- Drizzle with lemon juice and toss to combine all ingredients evenly. Remove from heat.
- Serve shrimp and spinach stir-fry over a bed of cooked quinoa.
- Garnish with sliced avocado and serve immediately.
