Zesty Shrimp & Veggie Medley with Quinoa

Ingredients

  • 8 oz shrimp, peeled and deveined
  • 1 cup quinoa, cooked
  • 1 cup broccoli florets
  • 1 cup zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup onion, thinly sliced
  • 1/4 cup red bell pepper, sliced
  • 1/2 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon chili flakes (optional)

Instructions

  1. Cook the quinoa according to package instructions and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic, onions, and red bell pepper. Sauté for 2-3 minutes until fragrant.
  4. Add zucchini and broccoli florets, cooking for another 5 minutes until tender-crisp.
  5. Stir in cherry tomatoes, shrimp, paprika, salt, pepper, and chili flakes (if using).
  6. Cook for 4-5 minutes, or until shrimp are pink and opaque.
  7. Drizzle lemon juice over the shrimp and vegetable mixture, tossing to combine.
  8. Serve the sautéed shrimp and vegetables over a bed of cooked quinoa.
