Zesty Shrimp & Veggie Medley with Quinoa

Ingredients
- 8 oz shrimp, peeled and deveined
- 1 cup quinoa, cooked
- 1 cup broccoli florets
- 1 cup zucchini, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup onion, thinly sliced
- 1/4 cup red bell pepper, sliced
- 1/2 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon sea salt
- 1/4 teaspoon chili flakes (optional)
Instructions
- Cook the quinoa according to package instructions and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add garlic, onions, and red bell pepper. Sauté for 2-3 minutes until fragrant.
- Add zucchini and broccoli florets, cooking for another 5 minutes until tender-crisp.
- Stir in cherry tomatoes, shrimp, paprika, salt, pepper, and chili flakes (if using).
- Cook for 4-5 minutes, or until shrimp are pink and opaque.
- Drizzle lemon juice over the shrimp and vegetable mixture, tossing to combine.
- Serve the sautéed shrimp and vegetables over a bed of cooked quinoa.
